Here Are Our Favorite Kids Organic Recipes
1. How to preserve apple slices - Naturally
Take a 500 mg. chewable vitamin C tablet and dissolve it in 1 cup of water. Cut 4 organic apples into wedges and place in a large bowl (if they are not organic - cut the skins off, if they are organic, leave the skin on). Pour the Vitamin C water over the apples. This will help the apples to "keep" and they will not brown as quickly.
2. Raiyna's Baked Tomatoes
Cut 2 Organic Tomatoes into slices. Grate organic cheese (the white kind of cheddar cheese because it doesn't have rennet in it) onto them Sprinkle with Sea Salt. Bake or put them into a toaster oven until the cheese is melted.
3. Chocolate Covered Cherry Smoothie
1/2 cup frozen pitted organic cherries
1 cup (around there...) of chocolate almond milk
crushed ice
Blend all ingredients in a blender until desired consistency Top with organic dark chocolate shavings and Quintin's Famous Cream (if you want) (make shavings by scraping a knife over an organic dark chocolate bar)
You can also make this smoothie using a banana instead of cherries. Then we call it a "Chocolate Monkey Smoothie".
4. Tired Turtle Soup
1 qt large container organic chicken broth
1/2 bag (8 oz.) brown rice pasta (we use Elbows)
Put both ingredients into a pot. Add some sea salt. Boil until done. Add 1 teaspoon organic butter, 1 ice cube and a bit more sea salt. Serve!
5. Indigo River Tea - Our Blueberry Green Tea
Using a large Strauss Creamery milk bottle place 1/2 cup Rapadura sugar into it, followed by 3 blueberry teabags and 2 green tea teabags. Pour filtered boiling water to the neck of the bottle. Steep 5-10 minutes. Scoop out teabags and add in 3-5 heaping tablespoons of raw unprocessed honey. Put the cap back on and store in the refrigerator until cold (this may take overnight). Make sure you stir it before drinking. Pour over ice. Enjoy!
5. Quintin's Famous Cream
1 Pint Organic Whipping Cream
1/2 cup Rapadura Sugar
1 teaspoon raw honey
Quintin swears the secret to his cream is in the mixing. He sets his mixer to one of the lower setting until the cream starts to thicken. Then he cranks it up for the finale and mixes it until the cream is very very dense. So that he can almost spread it like peanut butter. Then he auctions off the mixing beaters to the highest bidding brother or sister. Ohhhhh to be 10. (Because of the honey, DO NOT feed Quintin's Famous Cream to babies)
6. Stolen Nuggets
We stole this recipe from our homeschooling friends Ben and Sam, so that's why we call it Stolen Nuggets. Then we made some modifications to it so that it would be "Indigo River like".
1 pkg. boneless skinless chicken breasts - organic and grassfed (we like Rosie brand)
2-3 organic eggs
1 cup Organic cheddar Bunnies crackers
Cut the chicken into nugget-like pieces stir up the eggs and dip the nuggets into the eggs. Crush the bunnies (poor little bunnies). Roll the nuggets in the bunny crumbs. Bake at 425 degrees for 12-15 minutes. These can also be frozen after they've been cooked. You can then take them out and 'rebake' them.
7. Zennin's French Toast
Zennin is REALLY picky about how his French Toast is made. I mean - this kid can tell if something has beencooked in butter or margarine. Here's how he likes it.
4 organic eggs
1 tablespoon organic cinnamon
1/8 cup organic heavy cream
6 slices organic sourdough bread
Mix the above ingredients in a bowl and dip organic sourdough bread into it(we like rocky mountain sourdough). Fry on medium heat in organic butter and sides are browned. Serve with organic maple syrup OR top with berries and Quintin's Famous Cream.
8.Individual Sausage Pizzas (makes 4)

Crust
Feel free to use whatever is available
- French Bread, split lengthwise
- Pita or Flatbread
- Prebaked Pizza Shells
- If using refrigerated pizza or bread dough, please follow manufacturer instructions for preparing and shaping dough
Topping
Organic Italian Sausage - 4 sausages, sliced
1 cup tomato sauce
Provolone Cheese - 1 package, cut into strips
Optional Toppings
1 cup sliced mushrooms
1/2 cup sliced olives
1 chopped green pepper
1 chopped tomato
*Omit sausage for a vegetarian version
Preheat oven to 400°
Divide sauce evenly among the pizza crusts
Top each with sausage, optional vegetables and cheese
Transfer pizzas to baking sheet
If using raw dough, dust baking sheet with cornmeal, or brush lightly with olive oil to prevent sticking
Bake until cheese is melted and golden brown and pizza is heated through, about 8-10 minutes
If using raw dough, additional cooking time is necessary. Bake until crust is golden brown and no longer doughy in the center, about 12-15 minutes (lift edge of pizza with a spatula and check the bottom crust for doneness before removing from the oven)
* Cool slightly before slicing and serving

9.Pita Pocket Sandwich Contributed by Westbrae Natural Foods
Serves 1
3 Romaine lettuce leaves, chopped 1/2 cup parsley leaves, chopped 1 whole wheat pita 1/2 cup garbanzo beans, mashed 1 tablespoon tahini 1 tablespoon plain yogurt 3-4 cucumber slices 2 rings red bell pepper 1 thin slice red onion 1/4 cup fresh sprouts
Slice pita in half to make a pocket. Combine lettuce and parsley in a bowl, then stuff in pitas. Mash together the beans, tahini and yogurt and spoon into the pita. Add the remaining ingredients | |
10. .Zesty Corn Salad with Orzo

Serves 4
1/4 cup mild or medium salsa
1 tablespoon fresh cilantro, snipped
1 tablespoon lime juice
1/4 teaspoon ground cumin
2 cups cooked orzo
1 can Westbrae Natural® golden corn
1/2 cup sweet red peppers, chopped
1/3 cup scallions, chopped
To make dressing: Combine salsa, cilantro, lime juice and cumin. To assemble salad: Combine orzo, corn, peppers and scallions. Mix in dressing. Chill until ready to serve.
